A simple, spicy baked fish...
4 firm fish fillets, 5-6 oz each (I used catfish)
1 T. canned chipotles in adobo sauce, minced
1 1/2 T. vegetable oil
1 1/2 T. fresh lemon or lime juice
1 large clove garlic, minced
1/4 t. dried thyme
1/4 t. salt
1/2 c. cornmeal (or 3/4 c. cornbread crumbs)
Preheat oven to 375 F. Lightly oil a baking pan. Rinse the fish and pat dry.
Combine the chipotles, oil, juice, garlic, thyme, and salt in a shallow bowl (you can pulse in a food processor a few times first for a smoother sauce). Put cornmeal in another shallow bowl. Dip each fillet in the chipotle sauce, then dredge in the cornmeal and arrange in the pan. Bake uncovered 25 minutes, until the fillets are golden and flaky.
